The University of Idaho and Washington State University are partnering on a new fermentation science degree that will be offered starting this fall.

Food Science Professor Charles Edwards says they wanted to, “Capitalize on Washington State’s diversity because there are a number of fermentative industries here that we wanted to be able to serve. Certainly the most recent that has experienced incredible growth has been the cider industry.”

Edwards says that the students will gain the expertise and technical knowledge to move the industry forward into new ventures.

Director of WSU’s School of Food Science Barbara Rasco says that means good things for consumers as they'll, “Get some new products out there that are very interesting. But you make sure that whenever they hit the market they’re going to be safe, and directed to our consumers in this region, to their specific tastes and preferences.”
