The quickly-expanding cider industry could see a boost as WSU has hired a food and fermentation specialist at their Mount Vernon campus.

 

Bri Ewing will be teaching Cider School and other classes on making better cider, but also hopes to bring people together.

 

“It’s a good blend between industry and academia. The interaction with research and industry I really like.”

 

Cider School takes place April 24-28 in Mount Vernon and is designed to help cider makers craft even better products.

 

Ewing said there is also a lot potential for tree fruit growers.

 

“There’s a huge shortage of cider apples in Washington and the U.S. in general. A lot of the cider apples are coming in the forms of concentrate from Asia or somewhere else. One thing that a lot of people are starting to do is plant cider apple orchards.”

 

Ewing will also be participating in the the 2017 Portland International Cider Cup April 9th at Widmer Brewing in Portland.
