One area of livestock that is going through a revolution is bison where prices have jumped from $1.60 per pound in 2004 to $4.65 per pound last October.

 

National Bison Association Executive Director Dave Carter said the downside of demand is the crunch on their supply.

 

“We’re literally shorting our customers. We don’t have enough product to supply the market.”

 

Carter called bison a shining spot in agriculture.

 

And now Carter said they want to recruit and get more producers involved with informational websites, DVDs.

 

“But the best thing we’ve got in the bison business is that the people that are in the business love to work with newcomers. To help them get started and to build a successful operation. We know we need more producers out there, we want to help newcomers get started.”

 

According to the USDA, bison producers sold more than $340 million in meat in 2015.
